Snowman Truffles
These Pistachio Coconut Snowman Truffles are a no-bake festive twist on the classic coconut snowball. Soft, sweet, and gently nutty, they’re rolled in coconut and decorated into cute snowmen, an easy Christmas treat that’s perfect for parties, gifting, or making with kids.
Ingredients:
170 g desiccated coconut
80 g pistachio kernels, finely chopped
60 g unsalted butter, melted
200 g condensed milk
1 tsp vanilla paste
To decorate:
Extra desiccated coconut (for rolling)
Black, orange & white candy melts
Blue fondant (for scarves)
Pretzel sticks (for arms)
Method:
Mix the desiccated coconut and chopped pistachios in a bowl. Stir in the melted butter, condensed milk and vanilla until fully combined.
Chill the mixture for 30 minutes, then roll into small and medium balls. Roll each ball in extra desiccated coconut.
Stack two balls together to form a snowman (secure with a little melted candy melt if needed).
Melt the candy melts. Use black for eyes and buttons, orange for the nose.
Add pretzel sticks for arms and finish with blue fondant scarves.
Chill briefly to set, then serve or store chilled.
