Lamby Cookies
These Lamb & Flower Easter Cookies are a joyful little project that brings springtime magic to your kitchen. Made with a buttery vanilla cookie dough, the design comes together using a simple rolling ball method—no fancy tools required! Each flower is formed by rolling small dough balls for petals and centers, while the lambs are shaped in the same playful way—using rolled dough balls for the face, ears, and woolly body. You can get creative with shapes—turn petals into teardrops, add indents for texture, or even nestle a touch of jam in the center of your blooms. These cookies bake up beautifully with crisp edges and a melt-in-your-mouth texture, perfect for Easter gifting, teatime treats, or a sweet afternoon of baking fun.
Ingredients:
- 310 g all-purpose flour
- 1 tsp baking powder
- 30 g almond flour or cornstarch
- ½ tsp salt
- 225 g unsalted butter, softened
- 125 g powdered sugar
- 2 large egg yolks
- 1 tsp vanilla paste
- black candy melts for nose and mouth
- pink lustre dust for cheeks
Instructions:
1.Preheat your oven to 175°C. Line baking trays with parchment or silicone mats.
2. In a bowl, whisk together the flour, baking powder, almond flour (or cornstarch), and salt. Set aside.
3. In another bowl, cream the softened butter and powdered sugar until light and fluffy. Add the egg yolks and vanilla, and mix until well combined.
4. Gradually add the dry ingredients to the wet mixture and mix until a firm dough forms, scraping the bowl as needed.
5. Divide the dough into several small portions.
- For flowers: Tint portions of dough with food gel coloring (pastel pink, purple, etc.) for the petals and yellow for the centres.
- For lambs: Use beige for the face and ears. Natural cookie dough for the fluffy hair
6. Wrap each colored dough portion in plastic wrap and chill for at least 1 hour or until firm enough to shape.
7. Shape the Cookies:
Lay the cookie dough ball shapes onto the prepared baking trays.
Flowers: Roll out small colored balls and arrange into 5-petal flowers, adding a yellow contrasting center ball. Place a sheet of parchment paper over the cookie dough and gently flatten slightly with a base of a glass. Peel off parchment. Create indent in flower centers with toothpicks or fondant tools
Lambs: Shape a larger beige ball for the face and smaller ones for ears and fluffy hair small round balls in natural approx. 5/6 balls. Place a sheet of parchment paper over the cookie dough and gently flatten slightly with a base of a glass. Peel off parchment. Create indent for eyes with fondant tools.
8. Chill shaped cookies for 15 minutes before baking to hold their shape.
9.Bake for 12-14 minutes, until edges are just lightly golden. Let cool on the tray for 5 minutes, then transfer to a wire rack to cool completely.
9.Add the finishing details, nose and mouth with black candy melts and a cheeky blush for the wee lambs :) Enjoy.
