Hedgehog Cookies

If you are looking for a cookie that is as adorable as it is delicious, these Sultan Tip Piped Chocolate Hedgehog Cookies are the perfect bake. The chocolate dough pipes beautifully with ridged “spikes,” filled with chocolate centres. Finished with rosy cheeks and tiny eyes and nose, they are whimsical treat that will bring smiles to kids and grown-ups alike, crisp, buttery, and almost too cute to eat!

Ingredients:

·       125g (½ cup + 2 tbsp) unsalted butter, softened

·       ¼ tsp salt

·       50g (½ cup) icing sugar

·       20g (about ½ large egg white)

·       130g (1 cup) cake flour

·       20g (3 tbsp) cocoa powder

·       White chocolate or candy melts, tinted in desired colors (for decorating)

·       Chocolate colours - Beige, Brown and Black

·       Pink luster dust (for blush)

Instructions:

1. Make the dough: In a mixing bowl, beat the softened butter, salt, and icing sugar until light and creamy. Add the egg whites and mix until smooth. Sift in the cake flour and cocoa powder, then fold gently until a silky chocolate dough forms. Transfer to a piping bag fitted with a Sultan tip nozzle.

2. Pipe and bake: Line 2 baking trays with parchment paper. Pipe out chocolate rings with the sultan tip which resemble hedgehog bodies. You should get around 45 cookies. Chill in the fridge for 45 minutes. Bake in a preheated oven at 170°C 14–17 minutes, until set and lightly crisp at the edges. Let cool completely on the baking tray.

3. Decorate the hedgehog: Place cooled cookies on fresh sheets of parchment paper/tray. Melt white chocolate or candy melts and colour beige, brown and black. Fill all the cookie centers with beige for the body. Chill for 20 minutes to set and now pipe beige ears, snout and feet. Add brown for ears for contrast and add tiny eyes and noses with black. Chill for a final 10 minutes to set. Add pink luster dust for rosy cheeks. Enjoy!
