Checkered Cookie

These checkered picnic cookies are as joyful as a summer day—soft, buttery squares in shades of blue, topped with sweet strawberry and daisy details. Like a picnic blanket in cookie form, they’re perfect for sharing under the sun or adding charm to any teatime spread.

Ingredients


480g All-purpose flour

30g Milk powder

1/4 tsp Baking powder

220g Butter

1/4 tsp Salt

190g Sugar

1 Egg

40ml Milk

2 tsp Vanilla paste

Blue gel food coloring

Extra: red, yellow, green and white gel food coloring for strawberry and daisy cookie dough decorations


Instructions


1. Beat butter and sugar until light and fluffy.

2. Add egg, vanilla, and milk. Mix well.

3. Sift in flour, milk powder, and baking powder in three additions. Mix until fully combined.

4. Weigh the cookie dough and put aside 150g for colouring the red, white, yellow and green. Then divide the remaining dough into three portions: leave one plain, color one pale blue, and the other deeper blue.

6. Roll each color (plain, pale blue and deeper blue) into 1 cm thick slabs. (using a dough sticks to keep the cookie dough the same height) Freeze for 30-40mins until firm.

7. Cut each slab into 1 cm wide strips. Chill for another 30 mins until firm.

8. Assemble the strips into a checkered block, alternating colors like a woven picnic blanket. Wrap tightly with parchment paper.

9. Chill the assembled block for 1 hour.

10. Slice into 1 cm thick cookies. Place onto a parchment lined baking tray.

11. Using mini fondant cutters to create small strawberries and daisies from tinted dough and gently press onto the tops of cookies. Chill for final 15minutes.

12. Bake in a preheated oven 180°C for 10–12 minutes.

13. Cool completely on a baking rack. Finally paint some tiny white dots for the strawberries for the finishing touch.
